How are you enjoying the year so far? It’s hard to believe that spring is almost here! I don’t know about you, but last year
flew by much too quickly for me. My family and I have been busy playing in the snow, visiting with family
and cozying up for football and board games on Sunday evenings. Soon, though, we’ll be
busy finding new playgrounds, planting our garden, and wondering what the Easter Bunny will leave in baskets. For
something extra fun this Friday, I want to share 5 of my favorite recipes for portable spring snacks, perfect for after school
and weekend adventuring!
I can’t write enough wonderful things about this delicious energy bites recipe I found a couple of years ago. Not only
are these bites satisfying, but after two years of road trips, traveling to sports practices, and everything in between, my
children ask for these constantly! It’s also easy to substitute similar ingredients to make them healthier, nut free (we use Sunbutter
and Almond Butter) and get the kiddos in on the making, too!
I hardly go anywhere anymore without packing a little something for myself, particularly on days that are packed with
sessions. There’s almost nothing worse than feeling like I’m starving when I’m trying to capture precious memories!
That’s why I love these muffins. Protein packed and nutritious, these muffins are super any time of day! AND you can make
them in your blender!
After purchasing too many packaged snacks before and after ballet classes and soccer practices, only to have
my children be hungry 30 minutes later, I decided to try this recipe. These brownies pass both kid and husband
taste tests and are perfect for sharing when it feels like we practically live at dance! Another thing I love about this recipe is that no
one knows these chocolatey “treats” are made with sweet potatoes (unless I tell them)!
We LOVE pizza around here. While on the search for something new, I came across this recipe for
quinoa pizza bites. They're packed with balanced protein and antioxidant rich veggies --sh! Don't
tell the kids! We make a double batch and freeze un-cooked bites on a tray, then
pop them into a freezer bag to use on a busy school night. We have a hard time keeping these on hand!
Another thing my children love is blueberries. The kiddos and I like to find different ways to use them to keep
what we’re eating as clean as possible. We put them in pancakes, oatmeal or just pop them straight out of the
carton immediately getting home from the store! These yogurt bites just add a bit more fun!
